There was a recent debacle in a Los Angeles eatery that was
found to have served jam from containers previously filled with
mold. Since the photos emerged, people have been wondering how
this spot was able to operate for so long without anyone getting
sick for months and months, because obviously, mold is unsafe to
eat. Right?
According to the USDA, the mold in jams and jellies could
produce a mycotoxin (a poisonous substance that can make you
sick) and so should be discarded at the first sight of mold,
much like bread, but there are other foods (like cheese, salami,
certain vegetables) that are safe, and fermented foods that are
made to eat that way. But can also grow mold. To the layperson,
this is slightly confusing.
So, I need experts who can answer the following:
1. Why can you scrape the mold off certain foods and have them
be safe (like salami) and can't with others and have to toss at
the first sight of mold? (like bread). 2. What are some foods
where mold is not a dealbreaker (aka you don't need to toss the
whole thing)? Is jam one of them? 3. Is there safe mold? (Will
any kind of mold consumed make someone ill?) 4. What't the deal
with blue cheese? Are there edible molds other than that and
huitlacoche (aka corn smut)?
